The docent/park ranger/whatever her job title is who was sitting sewing at the Hartwell Tavern in the Minuteman National park yesterday said that stitch rippers are a modern invention. I was skeptical, but the patent that seems most like the one I use is from 1902. There were some other patents from the 1870s, but those devices looked awkward to use. She told me other stuff that I hadn't heard before, like the colonial era gowns being basically tacked together - the amount of structural stitching for the over-gowns was limited.
